So, after my sister Katie's post about candy bars, I really wanted one. But of course it's Sunday (Fast Sunday, no less!) and the store is too far away anyway. I ventured into the kitchen to see what I could come up with. James was on the computer, so I couldn't even plug the random sweet ingredients I had into an ingredient search on Allrecipes.
I was about to do some major experimentation involving marshmallows and almond bark, maybe corn flakes, maybe popcorn...hmmm. Then I realized that I had everything for No-Bake Cookies, amd, thanks to my cousin Olivia, I had a reliable recipe! My cookbook from a family reunion a while back no longer has a binder because of the fire, but I pulled the recipes out of it.
Yummy! Close enough to a candy bar for now.
No-Bake Cookies
3 cups quick oats
2/3 cup peanut butter
2 cups sugar
1/2 cup margarine
1/2 cup milk
1/3 cup cocoa
2 tsp vanilla extract
1. Line cookie sheet with wax paper or foil.
2. Combine sugar, butter, milk, and cocoa in medium saucepan. Cook over medium heat until mixture comes to a rollong boil.
3. Remove from heat. Add oats, peanut butter, and vanilla. Stir quickly, mixing well.
4. Immediately drop mixture by heaping spoonfuls onto wax paper. Cool. Store in a cool dry place.

ummm... yummy! Definitely one of my very favorite treats to make.
When I was in college & finals would come- around my roommates & I would make a batch & eat it with spoons straight out of the pot! Ah... that explains the "freshman 15" lbs I gained (or 20)!
Shoot! We have all of the ingredients for this recipe! Good thing I'm too sick to make them or eat them. Oh, and we don't actually have any oats because Roy blends them into a powder before he eats them.
I love those.... mmmmm! I made Chocolate Chip cookies tonight to satisfy my sweet tooth!
